Num Num


I promised to post the yummy dinner I made on Saturday night. It was even good warmed up for lunch on Sunday. It's sort of a conglomerate of a few different recipes but it turned out really good. The pasta, chicken, broccoli, and edemame amounts may be adjusted to the amount of food you want to make. I think carrots and water chestnuts would also be really good with this. It could easily be more of a stir-fry too. I think that's what I'm going to do the next time I make it. Anyway, try it - it's super easy!

Thai Peanut Chicken and Pasta
1 box whole wheat rotini
1 1/2 cups shredded cooked chicken (about 1 breast)
1 1/2 cups broccoli florets
3/4 cup shelled edemame (raw soybeans)
crushed peanuts (optional)
Sauce
1/2 cup natural peanut butter
2 garlic cloves
1/2 tsp. red pepper flakes
1/3 cup soy sauce
1/3 cup rice vinegar
2 tbsp. toasted sesame oil

Put all sauce ingredients in a blender or food processor and process until smooth. Set aside. Cook pasta in boiling water for 5 minutes. Add broccoli and edemame and cook for another 3 minutes. Drain and return to pot. Add chicken and sauce to pasta/vegetable mixture and toss to combine. Serve with crushed peanuts. Yum!

sounds delicious, going to have to try to sneak the edemames past Mrs. Phelps though.
